What is tofu and how to cook tofu
Tofu is one of the best options of protein for those who choose to or must carry a vegetarian or vegan diet. It is important, when you eliminate meat from the diet, replace the contribution of proteins with other food. The tofu, then, is the ideal food both for its nutritional properties as for the versatility of its flavor.
The tofu is basically the curd of the milk from soybean. With a look that makes us think of the fresh cheese, is not only essential for its contribution of proteins, but rather due to the minerals and vitamins that it contains (that the meat has not).
This is a food of eastern origin that basically has three basic ingredients:
- Soybean seed
- The water
- A coagulating or solidifying
The coagulant may be a mineral salt such as calcium chloride or magnesium chloride, or “nigari”, as it is called in Japan. In this way we get a result that is visually similar to the fresh cheese, which has creamy texture, a delicate taste, and whose presentation can vary depending on the dish in which you can cook and what we represent.
Apart from the tofu is low in calories and has no cholesterol (in fact works to their reduction)- we must say that There is still a very popular food in the West, but it is a very interesting alternative to taking their varied possibilities of how to cook.
How to cook tofu
What is good is that you have the tofu, the margin of all of its properties is that it allows us to cook in many and varied ways. We can serve for example in salads, in a sandwich, or cook it and serve it for example batter.
If you opt for it through the pan and you want to be able to cook the tofu properly we will have to get that the outside is a little crispy and the inside is chewy and full-bodied so that you can appreciate the flavor.
Depending on the dish to cook the tofu, you'll need to cut it into dice or cubes, triangles, fillets, or even take it apart and stretch it to recipes like for example lasagna.
If you buy tofu and you want to freeze it you can do it. What you have to do is remove it from the package, drain, and store it in a dish, or aluminum foil in the freezer. The freezing removes the water even more, and also changes the texture of the tofu, making you get a texture more chewy and meaty.
Recipes with Tofu
Dumplings of tofu
Ingredients:
- dough flaky in the form of discs
- 300 gr of tofu (smoked if possible)
- tomato dried
- 1 onion
- 100 gr of mushrooms
- olive oil
- salt and spices to taste
Preparation:
First we are going to finely chop fine the onion and hydrate in warm water the tomatoes (they should be a little soft). Sauté the chopped onion in a little oil until golden brown.
Add the mushrooms sliced, tofu, cut small, tomatoes, dried chopped. Season with salt, pepper and herbs to taste. Leave to cool.
Heat the oven to temperature strong. While you prepare the dumplings: fill the discs with the preparation of tofu and close (with a bit of water, stick the two corners of the dough and seal by a repulgue to taste). You can brush with a little beaten egg or olive oil. Cook until well browned and serve hot or cold. To enjoy a meal, very healthy and delicious!
